HE SAW A TRAY OF FRESHLY BAKED PANDESAL SITTING ON THE COUNTER AND HAD AN ‘AHA’ MOMENT - IT WAS ON! HE CRISPED UP SOME LONGANIZA, (FILIPINO SAUSAGE) FRIED AN EGG AND SLATHERED MAYO AND BANANA KETCHUP ONTO HIS TOASTED PANDESAL - THEN HE WENT TO TOWN…

…IT WAS A REVELATION!

MATT HAD CREATED THE PERFECT SANDWICH; FAT AND SALT STUFFED BETWEEN LIGHT, PILLOWY, EVER SO SWEET BREAD; SLIGHTLY EXOTIC AND DOWNRIGHT DELICIOUS. MATT AND HIS GIRLFRIEND CORVETTE STARTED EXPERIMENTING WITH DIFFERENT SANDWICH COMBINATIONS, USING CLASSIC FILIPINO INGREDIENTS AND SHORTLY THEREAFTER, SHAMELESS BUNS WAS BORN!

MATT & CORVETTE’S DREAM WAS TO START A FOOD BUSINESS AND WHAT BETTER WAY TO CELEBRATE CORVETTE’S HERITAGE THAN BY HIGHLIGHTING THE CUISINE OF HER HOMELAND.

FILIPINO FOOD IS THE UNSUNG HERO IN THE ASIAN FOOD LEXICON; A CUISINE INFLUENCED BY YEARS OF INFLUENCE FROM SPAIN AND CHINA. AMERICA INTRODUCED ‘WAR RATIONS’ LIKE SPAM, VIENNA SAUSAGES AND CANNED CORN BEEF DURING WWII.
