OUR STORY

Like all great ideas, ours was discovered during a drunken romp in the kitchen. Our co-founder Matt, had a hankering for something tasty, something unique, something to sop up yesterday’s regret. He saw a tray of freshly baked pandesal sitting on the counter and had an ‘aha’ moment - it was on! He crisped up some longaniza, (filipino sausage) fried an egg and slathered mayo and banana ketchup onto his toasted pandesal - then he went to town…

…IT WAS A REVELATION!

Matt had created something special; sweet and spicy sausage stuffed between light, pillowy, ever so sweet bread; the PERFECT breakfast sandwich. Matt and (his now wife) Corvette started experimenting with different sandwich combinations, using classic Filipino flavors and they soon realized they were on to something huge…

Filipino food is the unsung hero in the Asian food lexicon; a cuisine shaped by hundreds of years of influence from other nations…America then introduced ‘war rations’ like spam, Vienna sausages and canned corn beef during WWII, which soon became an integral part of the culture. Over time, what emerged was a multifaceted and complicated cuisine that to do this day is virtually unknown to most non-Filipino people. Matt & Corvette are on a mission to change that and bring this exciting and funky cuisine to VanCity and beyond!

Virtually everything on our menu is homemade, including sauces and garnishes. Nothing we do is traditional, but the flavors of the Philippines are always front and center. So go ahead…get shameless ;)
